Light, delicious and nutty

Macadamia Chicken Salad

The macadamia chicken salad is simple, healthy and quick to make. It is easy to prepare. Whether for a buffet, as a side dish, as a barbecue salad or meal prep – it always fits. And why is that? Because nutty puts you in a good mood.


For 4 servings of the Macadamia Chicken Salad you will need:

100 g rocket

1 oak leaf lettuce

1 cucumber

15 cherry tomatoes

300 g chicken fillet

2 tablespoons macadamia oil

50 g macadamia nuts, roasted and salted

The dressing consists of:

Juice of one lime

2 tsp honey

2 tbsp yoghurt or soy yoghurt

3 tbsp macadamia oil

Salt and pepper

Macadamia Chicken Salad


Wash the rocket and dry. Wash the oak leaf lettuce, cut into small pieces and dry. Halve the cucumber and cut into slices about 5 mm thick. Halve or quarter the cherry tomatoes according to preference. Wash the chicken fillet, pat dry and cut into small strips. Pour the macadamia oil into a coated frying pan and fry the chicken strips in it for about 10 minutes until golden brown.

For the dressing, juice the lime and add the honey, yoghurt and macadamia oil and mix well. Finally, season with salt and pepper.

Then put all the ingredients in a bowl and mix well. Add the dressing and enjoy the salad with its special nutty flavour. Depending on taste, finely chopped macadamia nuts can be sprinkled on top to decorate. Bon Appétit!
